Update the completion state and notes of checklist items on an admin task.
Only the items included in the checklist array are modified — items
omitted from the payload are preserved as-is. The server resolves
completedBy and dateCompleted from the API key user; clients should
not send these fields. Toggling isCompleted from true → false clears
both completedBy and dateCompleted.
